Well, around here, a (rare!) tomato means salsa with onions, chilis, garlic, fresh coriander, lemon juice, a touch of vinegar (optional) and of course nice ripe tomatoes, all whizzed up into a spicy sauce for dipping tortillitas!  Whatever they are…

A great recipe from my Auntie Lynne’s brother: 2-3 ripe tomatoes, 1 yellow onion, 3 cloves garlic, a nice handful of fresh coriander, the juice of a lemon, 1 small red chili and if very hot, use half, a grind or two of white pepper and salt to taste.

I don’t get a lot of south of the border treats because of the spices and such, but mama may be making tacos soon, having found miniature corn tortillas in an Asian market!

And it’s funny, mama says, but living in Europe sometimes touches off cravings for food one cannot find easily—tacos, burritos, chili con queso, and so forth.  So she’s headed toward her Mexican cookbook and a pan of enchiladas emerging from the oven very soon!

I just hope she remembers me before she stirs in all those jalapeñas, haha.

Whatever they are…

Well, salsa may be Mexican, but I’m a sucker for things Spanish because we live so close to Spain.  Maybe paella is next on the list and that means CHICKEN.  Uh, oh, watch out, chickies, haha.
