Mama, I want to make FOOD food, not eat this fake rat!
Well, I wanted a second lesson in the kitchen so mama indulged me by pulling out all the leftovers in the fridge and sautéing them in olive oil, mixing them with beaten eggs salt and pepper, and voila…dinner!
Well, not all leftovers, because you heat a few spoons of olive oil in a 10-inch pan (or whatever you have) add 1 onion and 1 or 2 zucchine, chopped fine, then spread some leftover rice or cooked pasta on top of the vegetables.
Then beat 2 or 3 eggs with a spoon of parmesan or a few spoons of any grated cheese you have a hankering for and when the vegetables are nicely cooked and looking a little browned around the edges, pour the egg mixture over all and cover.
In a few minutes the frittata will puff up and be cooked, and at this point you can stop and eat or slip it under a hot broiler for a couple of minutes to brown the top. (Mama cheats by sprinkling frittate with sweet paprika to make them brown prettily.)
Cut in wedges and serve with more parmesan.
I’m wiped out, even if that WAS easy.
I think I could lose weight cooking, haha.

And so much to choose from around here, but mama won’t hear of using my leftover lunch or dinner, haha. Doesn’t she LIKE kitty food?

Loulou – are you a psychic? That’s what we’re having today for lunch!! We have leftover pasta and veggies and Mama said – well, we can make a frittata – Papa bought eggs yesterday – ! Yesterday we tried out a new tapas place – it was noisy but really good! It was so beautiful this weekend, we stayed outside!! Hope the same there!!!
