Of course I can cook, but not when there is mama to do it, haha!
Okay, Fun-in-the-Kitchen-Isolated-from-COVID-Cooks out there, here’s mama’s latest obsession with whatever you find in your fridge:
Easy Fritters That Work Every Time
2 cups of any vegetable or combination of same, chopped medium fine (zucchine, corn, broccoli, cauliflower, greens, onions, mushrooms, etc.)
2 tablespoons parmesan or any hard cheese you like, grated
1 scant teaspoon baking powder
2 level tablespoons flour (brown, white, doesn’t matter)
Salt, pepper and pinch of curry powder
1 egg (and ONLY 1 egg)
Olive oil
In the bowl of a food processor, chop the vegetables until medimn fine, not too fine. If the squash seem too wet, drain the mix well or squeeze out the moisture, then put the vegetable mix in a bowl. Add all the rest of the ingredients, egg last, mixing well to form a cohesive mass. Brush a large skillet with olive oil, and when the skillet is quite hot, drop tablespoons of the mix into the skillet, flattening each fritter gently. Cook until you see crisp edges, about 2-3 minutes, then flip over the fritter and do the same on that side. They flip easily.
Serve with lemon slices, sour cream, yogurt, or any sauce you like, but mama manages to munch several even before serving with no sauce at all!
Meanwhile, I fritter away my time watching mice or fish on kitty videos while I wait for a nice little bite of parmesan….
Hey, that’s a Tuxie that looks like me up in that left corner! Does YouTube pay royalties?
You reminded Dad to make some corn fritters. Thanks
LOVE those, and I actually like just the corn, but not too much of it.
oops – I think my comment disappeared!! Mamma gives me dog paté with my kibbles with every day now!! YUMMMM!!!!! I think food is my favorite thing. Besides cuddles. Well, it’s a toss-up, LOL!!!
You doggies love everything while we are so finicky!
The mom thinks she could even make these!
Well, you mom will be very happy if they turn out well. It’s hard to mess them up. Just be sure the mix is not too wet as squash are sometimes if-fy that way.
Oh those sound totally delish and Mom said she’d make a kitty version (thanks for that!) of it for ME ME ME!
Hugs, Teddy 🙂 <3
WOULD LOVE THE KITTY VERSION….please share! For ME ME ME!
Yum that sounds delicious, Loulou. Thanks for sharing.
Well, mama does easy. She always says, hey Loulou being this old and cooking this long makes everything easier.
ooooh – fritters – well, Mamma has been painting and Pappa has been cooking – and he is GOOD! But Mamma is going to do pasta with encre de squid and truffles with scallops today. Her invention, LOL – it will be either good or BAD! And I get doggie paté with my kibbles now every day. What a life!
Oops encre de sèche – Mamma needs more coffee!!!!!
Encre de seche? In the fritters? Will get back to you….
WE LOVE BLACK PASTA! Mama used to cut out the little ink bags to make black risotto but we don’t go to the fish store right now…..
They sound good. My Rosie loves youtube, the red string.
OOH, thank you for letting me know about the string. We’ll try it tonight! Wonderful.
Oh there used to be a hometown restaurant that served corn fritters, to be drowned in syrup (or maybe it was honey – it’s been years) Wonderful memories. There’s a Dollar General store there now.(*sigh*)
Yum, we’d take a fritter for us critters!
Hey, just add crushed kibble mixed in with the egg and zucchine mix And see what happens.
