Sniff, sniff…simmering stew, I think.  

They’re simmering stews, I think, but not for me…la la la.🎶

Well, I can smell that mama is making a winter stew called Peposo, with two big spoons of ground pepper in it.  I, of course, do not get any, darn.

But I think a tiny bit of meat was saved from disaster for me so that I could partake of dinner with THEM!  I am on their time schedule, as happens sometimes when a kitty thinks it’s an anthro, or the anthros think they are kitties, haha.

Mama sometimes purrs at me and I just look at her and meow, “Say what, mama?” Or “Who do you think you’re kidding, mama. You don’t have whiskers or paws!”  Or “Okay, okay, I’ll humor you. MEOW, MEOW, was that enough, mama?”

But I have to say that the smell of the Peposo is driving us all batty….

1 1/2 pound cheap beef cut up in chunks and tossed in flour, salt and pepper, 1 sweet onion and 1 big carrot and 5 garlic cloves chopped fine, 1 bottle red wine, 2 tomatoes puréed, 2 large spoons of fresh ground pepper.

I know I have put this in before but it’s important to know that cheaper beef is best…chuck steak or flank steak or neck or whatever is NOT filet mignon, haha.  Mama wasn’t sure she mentioned this.

So sauté the meat, the onions, the carrots, the garlic, and tomatoes and cover with the wine, add salt, and cover the casserole to let the stew simmer in a 140C or 275F oven for two hours.

 

 

 

 

 

 

 

 

 

Meat tossed with flour, salt and pepper.

Serve over fettucine, or with soft polenta (corn meal mush, haha) or let the polenta cool and cut off slices to sauté with the stew.  Parmesan to sprinkle over all….

Drool.

MAMA, I’M HERE FOR MY DINNER! It’s your fault for making the house smell like this!
