I’m drooling over this!
Well, yesterday mama made a one-dish thingy that she thought you all might enjoy, as it is so easy to do and so delicious just by itself or on pasta or as a side dish for any main course. You may want to add brilliant additions that you think might work with the veggies!
1 eggplant, unpeeled
2 sweet onions, peeled (duh)
2 zuchine (that’s the correct plural in Italian, for the record but it’s now zucchini in Englisn)
1 sweet pepper, seeded
2 large tomatoes
6 cloves garlic, minced

Juice of a lemon and its peel, grated
1/2 cup olive oil plus a bit more if needed
Salt and fresh ground pepper
Heat the oven to 375F/180C.
Slice all of the vegetables thin, and in a large baking pan, toss them with the olive oil, salt and pepper, lemon juice and peel.
Bake for 40-50 minutes until almost caramelized. The smell will drive you mad.
EAT!

But I cannot eat nightshades…they really make a mess of my joints. Since taking them out of my food choices…my joints have become less sore, no hot ones, and some of the swelling has diminished…too bad, she loves all that. Maybe the courgettes with the garlic and onions, and add in some mushrooms??
Take out tomatoes and yes, use the veggies you can tolerate and the mushrooms and add the cheese in little inserted pieces and you’ll have a fine dish!
The mom is always looking for more recipes with veggies. This looks like a winner!
Oh, mama has so, so many original recipes that will be in her book.

My Mom says that looks SPECTACULAR (whatever that means) and she will try it. She adores eggplant….she used to love it fried but stopped with the FRY thing. Fresh veggies are a treat (she says). YUMMMMMMMMMMMMMMMMMMMMMM!

Mama has to say FRYING IS NOT SAUTE-ING. Mama does our eggplant in a little olive oil on both sides and it gets nice and crispy or you can do it in the oven and really crisp it well. Olive oil is all mama uses, even for “fried” chicken. Believe me, it is is NOT like fried anything but still crisp. Run those eggplant slices through a very light coating of flour, paprika, salt and pepper and they will be even crisper!
Oh my word that looks amazeballs, Loulou! All my favourite veg in one dish.
HAHA, I LOVE ‘amazeballs’….that is priceless. You can tuck some little pieces of feta cheese in the vegetable, too, or any fairly firm cheese nuggets you wish to use.

Well, in my opinion, you could stick some feta cheese in there, too…or Jack or any semi-softish cheese.
Sounds very tasty – but I’d have thought you had to peel the eggplant. It would certainly brighten it up though.
Mama buys organic and never peels eggplant and NEVER a tomato! All of our fruits and vegetables are organic and washed thorougly, but eggplant peel, when caramelized, is very tasty.

Ooooo, that looks good LouLou! I love that it is so simple, the simpler the recipe, the better the results I believe.
Well, mama’s book is all about simple. Merci for your view! It gives mama hope! Too many recipes try too hard and mama says she is old enough and experienced enough to know how a recipe is going to taste and she cuts the frou-frou often when it is taking away from the eventual taste. Often it tastes much better because of the paring down, so to speak.
