I can’t have hot peppers, so I just snuggle in my duvet to warm my cockles…
Well, today is recipe day and here is one of mama’s easy winter favorites, penne all’arrabbiata, pasta with garlic and hot pepper, peperoncini, and it will definitey warm your cockles in this wintry weather, whatever cockles are…
I am going to say this will serve two but it could serve three or four, depending on how much each anthro eats! Mama makes enough for leftovers, of course, for soups or frittatas or for our elderly neighbor who LOVES this pasta, haha.
1/3 cup extra virgin olive oil (important to use enough olive oil)
5 cloves garlic, chopped fine
2 small dried peperoncini, crushed with your fingers (then WASH YOUR HANDS REALLY WELL)
2 cans Italian crushed tomatoes (or 3 cups of your own sauce)
1/4 teaspoon salt
1/2 cup fresh chopped parsley
First put your pasta water on to boil. When it is simmering, add a spoon of salt and 4 cups of penne (or macaroni if you don’t have penne)
In a 10-inch skillet, heat the oil, add the garlic and peppers and sauté just until the garlic begins to crisp. Add the tomatoes and salt and simmer while the pasta cooks, or make the sauce ahead of time and let it just sit on the stove until the past is al dente (at the tooth).
Drain the pasta and put it back in the pot along with the sauce. Toss well, serve in hot pasta bowls and sprinkle each with the chopped parsley.
THEY had this last night because the wind was whistling and it really does warm up those cockles. I’m still looking around for whatever they are but haven’t found them yet! Are they nip-filled? Hmm..
.
That looks absolutely delicious, Loulou. Your mama is a whizz in the kitchen.
Well, merci, and tes, it is tasty and easy. Mama likes no-frills cooking.
Oh my that does look delish AND if I knew where our cockles were we would love to warm them up with this delightful meal!
Hugs, Teddy
Maybe just warm anything you find, haha.
That looks yummy!!
I would have to start with only one pepper…cause I really shouldn’t eat them too much. (Inflammatory nightshade…)
I bet it has a wonderful aroma!
I hope you got to try a bit of the penne, sans sauce, LouLou.
I had one with a little olive oil…nummy.
Tell your lovely mamma we’d love her to make this delicious pasta for us with your help of course. If that’s not possible right now we’ll just have to make it ourselves I guess.
Oh, Babsy, mama says to say that we MISS you and Mr C so much, it’s sort of a running missing because you are so far away. But as the movie said, “We’ll always have Montisi”, haha. Maybe again, who knows?
Looks wonderful !
Easey peasy, that’s for sure. Mamauses Mutti tomatoes or any Italian plain canned tomatoes, not the one with flavorings and spices. And we have our frozen sauce from summer.
That looks so good. Thank you for the recipe LouLou. XO
You are so welcome. It’s nice on a cold day, very simple.
Oh, Loulou!
This recipe takes me back to a favorite restaurant that served the spiciest pasta sauce EVER!
Yum…
Well, it’s wise to use only 1 or 2 small dried peperoncini, do not overdo it. Mama teaches subtlety in cooking. Let the ingredients speak their own language and not overwhelm the end result.
We’re sure the recipe is fabulous but our #1 does not eat garlic or peppers, or most spicy foods! Her loss!
Purrs,
The Chans
Next week mama will do one of her milder recipes and your #1 will be able to enjoy a pasta that mama originated and is very digestible and tasty. But they all are. Does #1 eat eggs and bacon bits? Real bacon, not backobits, haha.
Lou Lou love our time in Montisi with your Mamma and Papa remains one of our most beloved holiday memories. We still talk about it as if it were yesterday. Other memories may fade, but that one will always be with us.
Oh, boy, do we feel the same, you two. And you never know…..I hope you are feeling better. I’d like to know how covid affected you both. xxxxx Loulou
