Well, mama just wanted me to tell you that she started her third cookbook on Substack recently, and all the recipes and chapters are FREE and she is glad to help anyone with any of the dishes that catch anyone’s eye (s)!
Right now mama’s working on a piece about an apple cake that I am sure will be interesting to those of you who live in apple country.
Wish we did, but we have pretty good Pink Ladys and our sweet little apple peeler, corer, slicer that makes everything so easy to do. And the peelings are great for the compost…
If you invest in one of these, get the one with a suction clamp for smooth surfaces. This wonderful contraption is around $30, but mama has seen them on sites for $19, so do go on Google and shop around. Mama says you will never regret having this marvel.
And for a Tarte Tatin, this gadget is brilliant, giving you thin slices (much better than big chunks!) you can overlap to make a beautiful presentation when you turn the tarte over on a plate.

That apple-paring device would do Rube Goldberg proud ! What fun ! My Mom had a tomato juicer that did similar amazing things !

That sure does look very yummy!! I have an old recipe from my Mom, that is written in Dutch, (Appelkoek), took a minute to figure out the weights in our system…you make a sort of shortbread base and then add thin apple slices to that in a brick like fashion,and then make a wash with apricot jam over top of it all before baking. Whenever I made that in thw past everyone raved over it and wanted the recipe. Somehow I don’t know where I put that slip of paper…sigh…
