Uh, oh, only two left!
Mama eats these oatcakes, which she really loves, for breakfast, even more than the authentic Scottish ones, which are pretty good but they don’t have the secret ingredient of homemade ones.
Personally, I don’t need oatcakes, if you get my drift. I get my fodder in kibble but mama says kibble is not really that good with sliced bananas and milk and so she doesn’t eat it, but it is my cereal for the day and I’m sticking to that.
For mama’s oatcakes, all you do is use your food processor. Put about 3 cups of rolled oats, a pinch of salt, 2 tablespoons sugar, a tablespoon of baking powder, 2 tablespoons flour, a pinch of cinnamon, a handful of toasted nuts (mama uses grilled almonds), two tablespoons of rendered DUCK FAT (okay, you can use butter), and a slosh of olive oil (about 3 tablespoons) in the bowl of a food processor. Pulse it to a fine texture, then add COLD water just until it pulls away from the sides of the bowl but is still a bit wet/crumbly.
On a floured surface, roll out the dough to about 1/4-inch, using a bit more flour so that it won’t stick. With a cookie cutter or water glass, cut rounds and lift them with a spatula onto an oiled baking sheet.
Heat the oven to 350F or 185C.
Bake about 20 minutes, then turn off the oven and let them dry out a bit.
Mama says she doesn’t know your ovens so you’ll have to gauge whether they are getting too done and take them out a bit earlier.
Duck fat, compared with butter, has a lower percentage of saturated fats and a higher percentage of mono-unsaturated fats. All I know is that it smells really, really good when mama sautés things in it and they have a nice, nutty flavor…uh, oh, I wasn’t supposed to know that. Well, okay, she left out a little piece of potato once and I sort of licked on it because frankly, it was too big to get in my delicate little bouche, and normally I don’t do that sort of thing—I don’t get on counters or tops of things—but this potato had fallen on the floor and mama wasn’t looking.
Then she gave me a little taste of fat by itself and my tummy said, “Howdy!”
Probably no one knows where THAT came from but it came from “Shoo Fly Pie, and Apple Pan Dowdy makes your eyes light up and your tummy say ‘Howdy’. Shoo Fly Pie and Apple Pan Dowdy, I never get enough of that wonderful stuff.”
Same with duck fat.
And although mama loves porridge, she likes porridge in a cookie even more.
