MAMA SPEAKING:
1. Some of my favorite Christmas songs are ___Oh, Come, Oh, Come, Emmanuel__ and __Good King Wincesles.
2. I like to watch __choruses of carol singers on TV or soon-to-be live in our little village_ every year at Christmastime.
3. I would call this the most __melancholy but sometimes marvelous time of the year.

4. If I were on Santa’s naughty list, it would probably be because __uh…not sure I would be on that list at all, haha. I’m a pretty quiet, no-tricks kitty. A bit more anthro than kitty perhaps but I really can’t remember ever being naughty so
maybe my memory is going…uh, oh, just remembered that pee outside my box…uh, oh. I think I was a little wee-wah….probably the meds, haha.

HAPPY HANUKKAH…make latkes!
2 big peeled potatoes, grated and placed on paper towels to absorb excess moisture
1 sweet onion, grated
1/2 scant cup flour
2 shakes of salt
1 teaspoon baking powder
2 eggs
Fresh ground pepper to taste
For sautéing:
1/4 scant cup olive oil
In a bowl, toss the drained potatoes and rest of the ingredients and mix well. In a large skillet heat the olive oil just until smoking and drop spoons of the mixture into the oil, pressing to flatten the latke. When edges are crisp, turn over and cook the other side until golden.
You may add green onion tops, chopped fine, or a pinch of curry powder or turmeric to the mix to liven it up, but latkes are so good by themselves or with Greek yogurt or sour cream that mama rarely gilds the lily, whatever that means. Bon appetit!

Oh we know you’re NEVER bad….all of us kitties have a tiny little corner of our brains where “mischief” reigns supreme so once in a while we’ll do something surprising just to keep our humans on their toes though! My Mom loves latkes – so delicious and crispy. She’s a potato-crazy lady anyway but latkes are the CREAM OF THE CROP!

OUI OUI, potatos ROCK, mama says. Well actually she says potatoes are the biggest helper in the kitchen when a dish is needed to go with a meat, fowl or fish main course. LOVE potatoes au gratin, smashed potatoes, baked, fried, sautéed, in salad, mashed, whipped, souffléd,cubed, sliced, you name it!!!!

Thank you for participating in the fill-ins, great answers. I know you are NEVER naughty. I am going to make latkes tomorrow. I use matzo meal instead of flour. My hubby likes them with sour cream, but I like them plain. XO
Mama likes them plain, too, and yes matzo meal works very well. Mama’s bakery once made several hundred sheet pan-sized matzos for a huge event. The bakers were told they had to make the matzo in less than 17 minutes. Mama said 17 instead of 18 knowing that there might be a slip….The 12 bakers looked at her as if she had told them to fly. But they did it so well and the matzo was SOOO good. They were made with stone-ground wheat flour to simulate the unleavened meal used in the desert in the story of how matzo came to be.
