Well, mama’s sisinlaw sent her this article about one of the great cooks in the world, Alice Waters, who opened Chez Panisse 50 years ago and eventually produced some of the best chefs around, several of whom opened their own restaurants after having worked with her.
Mama urged me to put in the link because one of mama’s strong beliefs is that a recipe is a great base for understanding a dish or a particular food, but mama never follows any recipe to the letter, never has.
The only thing around here that’s straight from the package is my cat food!
Still, we always dribble extra virgin olive oil from Umbria over the top…
HEY, it saves me from having to pay for a hairdresser, haha.
Plus I do my own manicures. Then I can help mama pick baby lettuces…

Mama says it’s fun to read them but often she shakes her head at how simple they could be and aren’t.

It’s so lucky when one has an open local market, and they are becoming more prevalent, but some areas don’t have the weather for growing locally and having a market, alas.

Loulou my Mom says “recipes are guidelines” and that improvising and working with what you have on hand while using a recipe as a guideline is fine and dandy. She’s not an expert like your Mom but if some ingredients aren’t available then you take a shortcut right?

My peeps feed me cucumbers – and I LOVE them. Practically no calories – have you tried that? BUT first ask your Mamma to look and see if cats can eat cucumbers! Much less calories than olive oil!!!
I think I can have them, but olive oil doesn’t make me fat, it makes my pelt pretty cool. And mama uses nothing but in cooking. We go throught about a liter in two weeks.

I follow recipes the first time but then not!
Well, if mama sees “green pepper’ she skirts that and uses red or yelloe. Or none. Mama wrote an article on green peppers and the fact that they are simple unripe peppers, picked green because it’s more profitable for the sellers who have more quantity if they pick green instead of waiting for the pepper to mature.

You are welcome I have been having it on my food in a few drops every day and I’m sure my pelt is better for it. Also joints and overall health.
Petcretary often ‘adjusts’ recipes too.
We use lots of olive oil here, as well as avocado and coconut oils. They are healthy!!
Having said all that we seldom see her ‘inventing’ recipes, LOL!
And our noms too, are not adulterated, but sometimes she does mix brands/styles and flavors…
Well, we would love tips on noms…I have a varied diet but maybe mama could mix and match more. Still, I’m happy with it all, especially the mobility kibble from Royal Canine. Should be named “Feline”!

Yes, mama loves to read them but then she takes off. Mostly, she has been around so long, haha, in the kitchen that all of her own recipes are in a possible book now but she is lazy about finishing it…
Alice Waters is a true culinary pioneer – I gobble up any info about her – thanks! Olive oil on cat food, gotta try that here.
Oh, just a few drops every day. I am sleek and smooth. But there are other benefits, too, for the heart and keeping saturated fats low. Mama says that olive oil, bread, a tomato and a glass of wine are her favorite way to eat. Oh, and a bit of dark chocolate, haha.
Loulou, I don’t follow recipes either, because The Hubby does all of the cooking, and all I do is boil water for tea.
I like the idea of dribbling oil onto the cat’s food, however.
Well, my coat has always been slinky slithery like sable, whatever that is, okay okay, maybe not sable but mink, on sale, maybe. Olive oil is good for so many things.
Well, my pelt is like sable, er maybe more like mink, on sale, well, it’s soft, okay? And we all use lots of olive oil in this familly.
Some of the best dishes are made from not following the recipe.
