Hey, I’m the taster, okay, but mama forgot to put in the kibble!
With apologies to mama’s friend, Phyllis Vaccarelli, who has a cooking school in Los Angeles (where mama taught) called Let’s Get Cookin’, but it seems it has segued into Westlake Culinary Institute. Mama wanted me to tell you about another friend of hers who is, with her husband, cookin’ up a storm in Nice and there seems to be no end in sight for those two.
Now this may shock some, but not everyone is a cook. That’s just a fact, and if you’re not inclined to cook or like to cook, leave it to someone else and spend more time on your other talents, like tennis or skiing or whatever. But if you’re simply not interested in the kitchen, mama feels it’s best to stay away or just be a sous chef for the one who loves it.
And if you love food and want to make delicious things in your kitchen and don’t know where to begin, try this: Hint to your honey that you’d like to have a lesson with a nearby chef or cooking school near you. Mama’s friend was given a cooking lesson at Bacchinales in Vence, near Nice, and she has inspired mama to get back to some crazy pasta things that are fun to make, if only for the color!
Bacchinales pink pasta (photo: A. Esposite)
Yesterday, mama put a cooked beet, some flour, salt, one whole egg and one yolk (for the moisture in the dough—no water) in her pasta dough and came out with PINK noodles! Even I tasted one.
But papa says that simple is better and he likes plain old pasta, any kind but not flavored, for his sauces.
Still, it’s fun to mess around.
I think today mama’s into sweet red pepper pasta. Not sure I’ll taste that one, but when she gets to the tuna pasta, oh, boy!!! Or chicken gizzards…
Hey, the noodles would be pink, right? But I think we’d better stick to sweet peppers…

Your mama is very creative in the kitchen!
Well, it’s just that mama has papa and he loves to eat and she loves to cook so they are a good pair…Yin and Yang, haha.
Your mama has such interesting recipes. It’s great she loves to cook.
Well, she taught cooking for 12 years and wrote two books about it so yes, she really LOVES to cook. Sort of like other people love to plan tennis or cards or whatever…. plus papa loves to EAT!
Mommy used to like to cook but she said when you have to do it every day even when you don’t feel good it becomes a chore.
Well, I can see that. Mama’s stepdaughter has FOUR kids and cooked every day when they were little twice a day and then some, and it can get tiresome. Mama couldn’t live a day without cooking, but her mama and her grandmamma were the same.
Pink noodles fwum beets? Hmmmm mommy sez she’s wiff yous papa and will stick to just plain ole noodles. MOL She’s not very adventurous in dat department. Enjoy yous fun in da kitchen. When we had more money mommy used to spend a lot of time in there.
Luv ya’

PeeEss: we posted a poem today. Purrhaps yous posty inspired mommy. She just started rhymin’ and kuldn’t stop. MOL
Well, papa says that PLAIN WHITE pasta is his favourite. I mean you don’t want clam sauce on BEETS, right?
