Hey, I’m the taster, okay, but mama forgot to put in the kibble!

With apologies to mama’s friend, Phyllis Vaccarelli, who has a cooking school in Los Angeles (where mama taught) called Let’s Get Cookin’, but it seems it has segued into Westlake Culinary Institute. Mama wanted me to tell you about another friend of hers who is, with her husband, cookin’ up a storm in Nice and there seems to be no end in sight for those two.

Now this may shock some, but not everyone is a cook. That’s just a fact, and if you’re not inclined to cook or like to cook, leave it to someone else and spend more time on your other talents, like tennis or skiing or whatever. But if you’re simply not interested in the kitchen, mama feels it’s best to stay away or just be a sous chef for the one who loves it.

And if you love food and want to make delicious things in your kitchen and don’t know where to begin, try this: Hint to your honey that you’d like to have a lesson with a nearby chef or cooking school near you. Mama’s friend was given a cooking lesson at Bacchinales in Vence, near Nice, and she has inspired mama to get back to some crazy pasta things that are fun to make, if only for the color!

Yesterday, mama put a cooked beet, some flour, salt, one whole egg and one yolk (for the moisture in the dough—no water) in her pasta dough and came out with PINK noodles! Even I tasted one.

But papa says that simple is better and he likes plain old pasta, any kind but not flavored, for his sauces.

Still, it’s fun to mess around.

I think today mama’s into sweet red pepper pasta. Not sure I’ll taste that one, but when she gets to the tuna pasta, oh, boy!!! Or chicken gizzards…image

Hey, the noodles would be pink, right? But I think we’d better stick to sweet peppers…
