Hah! You think this is just a lump of dough!  Just wait…

Well, here we go:

I help mama dump the flour in the bowl of a food processor—one cup for each person so if you’re making pizza for two this is the recipe and it can be doubled easily. I only eat a bit of it so we don’t have to add much for me…

In the bowl of a food processor put:

2 cups of plain white flour

1 package of dry yeast

1/4 cup of olive oil

1/2 teaspoon salt

2 small mozzarella di buffala and a few basil leaves, chopped small

Pulse until mixed and then add about 2/3 cup water or enough to make the dough pull away from the sides of the bowl and still be UN-sticky. The dough should be shiny and smooth and easily handled.

Oil a bowl and put the dough in it to rise until double, about 45 minutes. Cover.

When the dough is risen, oil a baking sheet, place the dough in the center and push the dough with the flat palms of the hands to spread it to the corners of the baking sheet. The dough must have NO accidental holes (cover them up with a little piece of dough and continue stretching) and be uniform in depth—very thin!

Let rise in a warm place for 15 minutes while the oven heats to the hottest temperature you have on the dial, usually 500F or 275C.

Spread a plain tomato sauce over the pizza dough, keeping it very thin.

Put anchovies or cooked sweet sliced onion or sliced mushrooms on top (a few suggestions)

Sprinkle with olive oil

Cook the pizza for 6 minutes, then REMOVE from the oven and sprinkle with the chopped mozzarella and basil mixture. You put this on last to keep the cheese from becoming inedible, hard and rubbery.

Replace the pan in the oven and cook for 4 more minutes or until very brown and crisp on the edges.

NOW: Many ovens, even good ones, will not brown the bottom of the pizza well. If the bottom of your pizza did not brown, use your gas or electric burners on your stove to brown the bottom. This must be watched so that it does not burn, but you will get a lovely brown crust on the bottom of your pizza.

Serve with crushed hot peppers to sprinkle on the top.

Well, I avoid those things like the plague because they make me SNEEZE and my eyes will surely water and we don’t want THAT…not these bedroom eyes!
