So is mama going to let me lick this bowl? No way, Jose. She barely let me lick the spatula and then she grabbed it away too soon because this stuff is not food for kitties. Only a teeny-tiny bit every now and then. But what can I do? Mama is making truffles all the time and I have to sit there smelling the dark chocolate melting with the cream and then she puts in a slosh of something that smells really good (Cognac, I think) but I certainly can’t have that! Actually, I’m just making this up. Mama doesn’t drink Cognac and can hardly hold a glass or two of vino!
Mama puts 2 bars of Lindt dark chocolate (85%) in a pan over simmering water, adds about a cup of heavy cream, a few grains of salt and about 2/3 cup sugar and lets it melt until it’s really smooth and creamy and thick and then she puts in that slosh of Cognac I mentioned before and then she puts the bowl in the fridge until time to make the truffles.
HEY, she put YOGURT on here instead of bitter chocolate from her truffles!!! Yuk, not quite the same, right?
She uses unsweetened cocoa from Droste chocolate company and puts about 1/2 a cup of that in a large bowl. Then she takes out the cold chocolate and uses a teaspoon to drop the chocolate into the cocoa after she has sort of mushed the rough shapes of chocolate around in her hand. You get chocolate all over your hand but then you can let your kitty (okay, or doggy) lick it off. Maybe.
Then when the bowl of cocoa is all full of little rough balls, you sort of shake the bowl around to coat the truffles and then you put them in a larger storage box in the fridge. When you want to make little boxes of truffles for gifts, just use a dozen or so for each gift because these are muy rico, as they say in Spain. Really rich.
Mama is the only person I know who puts the “empty” chocolate pan in the sink to soak without letting me or papa know that we could have cleaned it for her!
Frankly, I think she may have lost her marbles…whatever that means.
