Mama made sauce for winter and eggplant lasagne and baba ganoosh and we’ll STILL trying to figure out more recipes for eggplant! All welcome.

Well, I thought I had commented but it looks like it got lost in the ether. So, let’s try again. LouLou, you have a darling tummy. Here is my eggplant recipe: Take a whole eggplant, and poke holes in it then bake it for up to an hour. Let it cool, then peel it and mash it. Saute in olive oil with chopped garlic and tomato. Take a lightly beaten egg and throw it in and stir in until everything is cooked. The egg is optional, it does hold everything together nicely though. We eat it over rice, or as a dip with pita chips or spread on a nice slice of french bread. It is a Persian dish that is called Meerza.
Drool, drool, mama is drooling, too, all over her computer!!! She is making this today as she just got an eggplant yesterday in her groceries! MERCI!!!!!Do Meerkats eat it, haha.
Baba ghanoush is EXCELLENT on roasted sweet potatoes, Angel Loulou.
There is a blend of flavors that is out of this world.
MERCI, we will try that soon. We ate ours on Samosas…haha, blending of cultures but mama loves sweet potatoes.

My Mom’s “guilty pleasure” is fried eggplant…..not good for her probably but she loves it and maybe once or twice at most a year she gives into the NEED to fry!!! LOL

It’s good for her and has nutrients. Use olive oil, and tell your mama to eat just a bit less than she can burn that day and she can eat it whenever she chooses. Nothing bad about olive oil and veggies.
How about and Asian spicy eggplant? I’m sure you can find recipes online. What a joy when neighbors share their bounty, right?

What a cute tum you have LouLou! We have an eggplant recipe called Meerza: Put some fork holes in the eggplant, then throw the whole thing into the oven around 350 degrees. Bake for around an hour (for a large one), let it cool then peel it. Mush it all up and put it in a pan with olive oil, garlic and a little tomato, salt & pepper, saute then stir in a lightly beaten egg to hold it all together and saute until the egg is cooked. We eat it over rice or as a dip with some pita chips.

Sweet Loulou, Lynn has nevfur eaten eggplant. She thinks they are funny lookin’. But the tomatoes, oh, her mouth is waterin’. We have a deer herd that runs our yard and eats evfurry thing so no growin’ veggies here. They already git all the apples afore Lynn can pick ’em up! You look as comfy on yer rocks as me on my catio. Precious
