So sad. The Pope died at 7:35 this morning, and Rome is in mourning. As are so many around the world. A good man who fought to improve the lives of the poor and marginal humans on this earth.

Today is also the ‘little Easter’, the day on which families take picnics to a sweet spot and eat all the leftovers from yesterday, at least that’s how mama sees it.
And boy, were there leftovers: wonderful spinach mixed with a bechamel sauce, guacamole, little mozzarella balls, slices of mama’s tart and her stepdaughter’s wonderful zucchine/mint tarte, hummus, peppers, two desserts and mama can’t list it all here but it will certainly make a nice picnic for that family!

Your Easter Monday picnic sounds fab!
Here I made a spinach spanakopita for the main course; a bean and corn salad, with a spicy avocado dressing; and a harissa roasted cauliflower. For dessert we had a key lime pie, with a whipped topping and raspberries…Vegan the whole meal to keep our vegan son happy…we all thought it was yummy, too. Vegan food for sure is not yuck or boring!
Mama is drooling on her computer and what a cook you are and a good mama to appease her son! I like the Pasquetta saying, and the idea of celebrating Little Easter the day after with a picnic. Maybe next year I will take the day off and be able to do just that.
My condolences to all of us, I am not Roman Catholic, but this Pope tried so hard to be a man of good influence. It’s how we all should be.
Yes, a good heart and a man who worked for the underlings of the world who suffer so much, thanks even more to our illustrious, cruel and unfeeling “leader”, but perhaps the new pope will continue the care that Francesco gave to all.
