Well, when mama makes a whole lot of something for dinner and then finds out she doesn’t need it that night, she turns it into something else.
In this case, mama made a fairly large amount of Thai rice, which is really fine all by itself with a little butter and salt (even I know that), but there was so much left over that she said abracadabra, whatever that means, and simply turned it into a salad for this hot weather we are enjoying.
She diced one of those long cucumbers, a sweet onion, scissored some chives, a large tomato, some coriander (cilantro), and then, because the bag they were in starting dripping in the fridge and getting scallop smell all over a shelf (!), she poached the guilty scallops in olive oil and cut them up, too. Into the salad they went. Oh, then some mint from the new plants that are coming up alongside the terrace, some parsley, and then mama squeezed fresh lemon juice over all and doused the whole shebang with a generous helping of olive oil.
Hmmm…this mint smells almost as good as my nip!
Why on earth am I telling you all this? They wouldn’t let me touch that salad with a ten-foot pole!
Not that I’d want to, but still…it did make me salivate a little.
I got a scallop. I’m satisfied with so little in life, haha! And it tasted a whole lot better than LIZARD!
Wow – your mama cooks like mine! If there’s not enough – they invent a new dish with what’s around – and it works!! But I’ll bet that scallop was DEELISH!!! Mama made 4 big sacs to freeze of Tamarind Shrimp (Ottolenghi) and threw a bag of small scallops into that. Today they load the car with paintings and go to Beaulieu. Mama’s missing your mama on this. Next year?
Oh, BREAK A CANVAS!!!! I hope so much your maman and mine can have another expo. The world seems to be filled with computer generated graphics art, not much painting. See you SOON. And mama says the friends in Nice have just had a baby so to meet them your mama would have to babysit…..haha.

Loulou, your momma is quite the artist in the kitchen! Mom says it wouldn’t even cross her mind to put those ingredients together; she’s not creative in the kitchen what so ever. Tee hee hee.
Well, you have to want to be in the kitchen and mama cooks fast. Plus she ran a cooking school for 12 years.
