Mama, is that yogurt coming my way?

Well, I haven’t posted one of mama’s recipes lately and I thought, because of the hot weather, you might like to try this really easy cold soup that really does cool you down inside!

At least they tell me it does.  But I do love the nice smells in the kitchen when it’s being made.  I sort of salivate all over my kibble dish and then mama gives me a little yogurt or cheese, depending on what she has used for the soup.  Recipes are invented and changed around here all the time, just for fun.  So here it is:

2 fresh zucchine (zucchini is incorrect, at least in Italian), each cut in a few pieces

1 sweet onion, chopped coarse

1 clove garlic

Broth, chicken or vegetable, both are fine

Juice of a large lemon

A few fresh mint leaves (or basil or cilantro, if you prefer–mama changes sometimes)

1 small triangle of a processed cheese OR 3 generous tablespoons of plain yogurt, full fat

1 ripe avocado (!)

In a saucepan, put the zucchine, onion, and garlic.  Cover just to the top of the vegetables with broth. Bring to a simmer and cook for about 15-20 minutes until the vegetables are soft. Cool.

In the top of a food processor or blender, put the rest of the ingredients and blend to a smooth purée.  Add salt and pepper to taste.

You may also blend the soup with a hand frapper, one of those very powerful hand-held wands that really make ingredients smooth and beautiful.

Chill the soup and serve with a little mint or cilantro or chopped avocado on top in the soup bowl.

This soup is so, so easy and is also good in winter, hot, but we all like it (haha, get the “we”) really chilled on these canicule (heat wave) days.
