DON’T THROW OUT THAT WATER, MAMA!
Well, mama says that after having put in the lasagna recipe and several other pasta dishes over the years, she would like to share this site with you that my auntie Barbara sent yesterday.
We have actually been using pasta water for bread-making for some time, but you must cut the salt, mama says, in the bread recipe, if you have salted your pasta water liberally.
Mama’s trick is using her cupped hand to measure 2 tablespoons of salt for pasta water, and the salt really is necessary unless you are cutting back on sodium. Only a small portion of salt goes into the noodles, and the dish is greatly enhanced by properly salted water, especially if the sauce is a fairly bland one, like olive oil, garlic and pepperoncini, a simple Italian classic.
You may ask, what on earth does a KITTY know about any of this, but what do you think I am checking out when you see me snoozing with one eye half-open? Hah!
I watch, I make notes, if only to remind mama that when she cooks a piece of chicken, she should TAKE OFF A NICE BIT FOR ME BEFORE THE ONION AND WINE HIT THE PAN!
You have to watch cooks. They can get really crazy when they think no one is…watching, that is, not crazy.
Hey, there are sous-sous chefs and there are lou-lou chefs, haha!
And a chef’s life is not easy…
A lou-lou chef has to grab some zs wherever she finds them, that’s for sure.

Well Papa cooked Moroccan – and it was delicious (so they say) but I got chicken with the sauce licked off!!! They are trying new recipes- due to the lockdown and are coming up with some GOOD STUFF!!!! Again, so they say…….
Yes, they always lick off the sauce, those bad gourmets! Unless it’s cream sauce.

If one doesn’t salt the water, it’s good for plants when it cools.
