Well, I am drinking so much water with this diabetes thingy. Makes me sleepy, too…(or maybe it’s my ‘nana).
Still, it’s often hard to get kitties to drink so I guess it’s good for me. Mama drinks a lot of water, too, especially in dry wintertime. We are thankful that we have water…so many around the world do not!
Boy, this is all exciting news, no?
Wish we had newsy things to report. Mama made a butternut soup for a shindig at our community garden and learned that organic butternuts are way tastier than the prepared cubes bought in markets!
This soup is nice for Thanksgiving, too. We are thankful for butternut squash and for our beautifiul organic permaculture garden started by expert gardener, Maryline Buckingham, in our little village.
The trick is to stick the squash with a knife a couple of times (that’s not easily done either) and microwave the very hard squash for about 5-10 minutes. The skin becomes soft and the butternut can easily be cut in two, de-seeded and roasted in a moderate oven until soft, about 30 minutes, depending on the size.
Then mama does this:
1/4 cup extra virgin olive oil
2 sweet onions, chopped coarse
4 garlic cloves, chopped
All of the soft oven-roasted squash
Chicken or vegetable broth, enough to cover
Squeeze of lemon or lime
Grate of fresh ginger
Salt and pepper
A spoon of butter
In a large soup pot, heat the olive oil, add the onions and garlic and cook until soft. Add the squash, the broth to cover and simmer until the marriage is consumated, about 30 minutes. Add the lime, ginger, salt and pepper and stir in the butter. Taste for seasoning. The soup should be balanced but enough lime to create interest. Whiz everything up with a hand mixer until very smooth and serve hot, sprinkling a little chopped basil or cilantro or pinch of ground chili over each bowl.
Mama was told by a Bulgarian friend that butternut squash is very good for your eyesight.

That soup sounds super delish! We have squash in the house…maybe we’ll try that over our Holiday weekend.
Glad you at least gave the squash a lick…our pups love a chunk of the uncooked cubes… Then those al dente cubes (About 2 inch in size) which I cut up myself form the whole raw one…and then slow cook it with a sprinkle of sugar to bring out its sweetness and a splash of water to keep it moist, are for us way yummier than if its cooked to a puree. Any leftovers can be purreed and made into other recipes, even as a sub for pumpkin in pie or muffins, etc.
LOVE others’recipes and tricks and yes, that squash has many facets! Love it just roasted and eaten!

My Mom has a butternut squash in the refrigerator right this moment so she will see if she can manage to make this soup. My Mom and Dad are happy to learn it’s GOOD for them to eat….I’m not sure I would like it as I’m super fussy about food BUT I do want my parents to eat healthy stuff. Mama says to microwave it first before splitting, removing seeds and roasting for about 30 minutes, depemding on size. Then scoop out and continue. Mama says that splitting those squash is really difficult without the zap from the micro.

Hmmm…butternut squash is very orange, and the part that makes it orange (beta-carotene) is supposed to be what makes carrots good for your eyes so it stands to reason. Glad it was something you could enjoy too LouLou !
Well, I was a bit if-fy about squash but I did lick it. And yes, beta-carrot-tene is wonderful.

The Hubby refuses to venture out until it’s warmer, so we’ll have to make due until then.
