I can’t have hot peppers, so I just snuggle in my duvet to warm my cockles…

Well, today is recipe day and here is one of mama’s easy winter favorites, penne all’arrabbiata, pasta with garlic and hot pepper, peperoncini, and it will definitey warm your cockles in this wintry weather, whatever cockles are…

I am going to say this will serve two but it could serve three or four, depending on how much each anthro eats! Mama makes enough for leftovers, of course, for soups or frittatas or for our elderly neighbor who LOVES this pasta, haha.

1/3 cup extra virgin olive oil (important to use enough olive oil)

5 cloves garlic, chopped fine

2 small dried peperoncini, crushed with your fingers (then WASH YOUR HANDS REALLY WELL)

2 cans Italian crushed tomatoes (or 3 cups of your own sauce)

1/4 teaspoon salt

1/2 cup fresh chopped parsley

First put your pasta water on to boil. When it is simmering, add a spoon of salt and  4 cups of penne (or macaroni if you don’t have penne)

In a 10-inch skillet, heat the oil, add the garlic and peppers and sauté just until the garlic begins to crisp. Add the tomatoes and salt and simmer while the pasta cooks, or make the sauce ahead of time and let it just sit on the stove until the past is al dente (at the tooth).

Drain the pasta and put it back in the pot along with the sauce. Toss well, serve in hot pasta bowls and sprinkle each with the chopped parsley.

THEY had this last night because the wind was whistling and it really does warm up those cockles. I’m still looking around for whatever they are but haven’t found them yet! Are they nip-filled? Hmm..
