Oh, mama, that ice cream used to drive me bonkers…
Well, I guess the treats I’m talking about are mama’s latest curry that she did for some neighbors, one of whom brings her a spice from Goa called Xacuti, and 3-minute ice cream that literally takes about 3 minutes.
Serves 4:
Cut up into slices some lovely summer fruits like 2 large nectarines and 2 large peaches, add 1/2 cup sugar , a dash of vanilla and freeze the whole shebang.
When you wish to serve the ice cream, take out the fruit and let it sit for a few minutes to unthaw very slightly. Transfer the fruit to the bowl of a food processor, pulse it a couple of times to break up the fruit, add about 1/2 cup of heavy cream or thick coconut milk and whiz up into a lovely ice cream in about 2 minutes. Serve immediately.

My Mom loves curry – puts it in her chicken salad and shrimp salad…….and this ice cream sounds FAB! You know Mama has your Mom’s recipe books and they are FULL of magical goodies – we recommend them to EVERYONE!!!!!! Also – just FYI – that photo of you is beyond adorable (of course).

I used to make Bryanna (?), an Egyptian curry dish with lentils. Hot stuff indeed! YUM!

Well, it’s cool and easy and you can use mangos, too. Mama forgot to mention that. We have a frozen food place called Picard here in France and oh, the riches! Mangoes, berries, you name it.
