Well, around here, a (rare!) tomato means salsa with onions, chilis, garlic, fresh coriander, lemon juice, a touch of vinegar (optional) and of course nice ripe tomatoes, all whizzed up into a spicy sauce for dipping tortillitas! Whatever they are…
A great recipe from my Auntie Lynne’s brother: 2-3 ripe tomatoes, 1 yellow onion, 3 cloves garlic, a nice handful of fresh coriander, the juice of a lemon, 1 small red chili and if very hot, use half, a grind or two of white pepper and salt to taste.

I don’t get a lot of south of the border treats because of the spices and such, but mama may be making tacos soon, having found miniature corn tortillas in an Asian market!
And it’s funny, mama says, but living in Europe sometimes touches off cravings for food one cannot find easily—tacos, burritos, chili con queso, and so forth. So she’s headed toward her Mexican cookbook and a pan of enchiladas emerging from the oven very soon!
I just hope she remembers me before she stirs in all those jalapeñas, haha.

Well, salsa may be Mexican, but I’m a sucker for things Spanish because we live so close to Spain. Maybe paella is next on the list and that means CHICKEN. Uh, oh, watch out, chickies, haha.

Tell your momma that if she makes tacos to set aside some ground or shredded beef to put in your bowl. Mom does that when she makes tacos or spaghetti sauce. It is so-o nom nom good – that beef!

oooh-la-la!!! Mama drooling – salsa, tacos – and when the weather is a bit cooler, chicken molé and chili con carné!! Mama saw a pub on tv recently for crispy little tortilla shells that are like mini-pastry shells (only thin tortillas!) that you fill with whatever. She hasn’t found them yet – but looking. ooooh-la! Salsa – makes me want to dance!!!!
OH, if you find them, my purse is open! Already crispy-cooked? Ours are soft corn and must be crisped.

Jan loves salsa! Especially covering a chimichanga. But she says that’s too spicy for us so when she brought half home from her belated birthday lunch recently, she didn’t share even a teeny bite with us. There should be a law. If the humans get special treats, we should too.

The “miniature corn tortillas in an Asian market ” sounds a bit like the Won Ton Tacos some of my friends ordered in a local restaurant the other day. They said they were delicious, and the description seems to match. But they didn’t have your Mama’s salsa !
Well, won ton is a flour-based wrap and the tortillas, corn, but mama has wonton dough in the freezer for Chinese ravioli or gyoza. LOVE those.
